Colleagues in the Glass is a series of “open glass” meetings with oenologists and technicians who, taking their cue from the tasting of some significant wines, tell us about a territory and the grape varieties found there. On the occasion of the 10th edition of Enoforum, we wanted to celebrate the event by organizing three celebratory tastings, taking advantage of the availability of some technical friends from prestigious foreign production areas especially for the occasion.

GIULIANO BONI: “Pinot Noir in Champagne, a grape variety… from the Mountains!”

Champagne is a sparkling wine primarily the result of blending, due to the wide range of options available for cuvée elaboration: 320 crus (communes, located in 5 different departments), 7 authorized grape varieties, the different pressing fractions, and the available vintages. Calculating the possible combinations could be fun, in practice the possibilities are endless.
