Dealcoholization: state of the art and effects on wine quality

The decoupling between technological maturity and phenolic/aromatic maturity due to global warming may result in wines with excessive ethanol concentration. At the same time, the demand for low alcoholic beverages has increased in recent years. Finally, excessive ethanol content can lead to wines with organoleptic imbalances.
What strategies are available to produce wines with lower alcohol content? What aspects should be considered to obtain balanced and sensorially pleasing wines to meet market needs?
The presentation by Maria Tiziana Lisanti , University of Naples, at Enoforum 2024 will give an overview of the different aspects related to the dealcoholization of wine, focusing on its effects on the composition and sensory characteristics of wine.
Brief CV:
Maria Tiziana Lisanti is a professor at the Federico II University of Naples, where she teaches courses in oenology and sensory defects of wine and collaborates with numerous universities around the world, in particular with the Institute of Vine and Wine Sciences of the University of Bordeaux.
Since 2004, his research has focused on the impact of production and storage variables on aromatic profiles and wine quality. Today he works on wine defects, sulfite reduction, the impact of oxygen permeability of corks on the evolution of the olfactory profile of wine as well as on its dealcoholization. .
