We consider mountain vineyards to be those cultivated on slopes above 18-20%. Mountain viticulture is characterized by its particular mesoclimate and microclimate conditions (reduction of temperature with altitude, radiation and relative humidity conditioned by exposure, less efficient precipitation, etc.) and shallower and less fertile soils,…, with risks of erosion, limited water retention,… difficult and demanding viticulture that conditions the vineyard conduction system, its management and mechanization.

In general, the vineyards are less vigorous, with lower yields and with very variable grape compositions and enological potentials depending on the altitude, exposure and soil, which can improve or worsen the saccharimeric, industrial, phenolic and aromatic maturities. Depending on the possibilities, we cultivate the vineyards on slopes with regular plantings, flat or sloping terraces and terraces.

In mountain vineyards with steep slopes, we must take into consideration the type of conduction system and layout of the vines, soil management, irrigation, phytosanitary defense and harvesting, among others. Their specific and accentuated conditions recommend well-selected rootstocks and varieties depending on whether they favor cooler or warmer, drier or wetter conditions, among many others.
