The most recent advances in sparkling wine production

Sparkling wine plays a significant role in the wine market whose exports increased in 2022, both in value and volume, and Italy has the lead in exports on a global scale. Given the importance of this type of product, the seminar will focus on the latest research regarding its production, including investigations still in progress. Emphasis will be placed on the process steps that are peculiar and require more control, including pressing, bottle frothing, aging on yeast lees and disgorging. Insights and ideas aimed at further implementing the quality of Italian sparkling wine will be provided.
