Wine stability: preventing precipitation and microbial contamination
Overview of the importance of self-monitoring in the winery to improve internal quality control and risk management of the most common enemies such as: microbial contamination, tartaric precipitation (potassium and calcium), and protein.
In this session we will take a closer look at bioMérieux’s end-point PCR, VERIFLOW®, for proactive monitoring of the main “spoiler” microorganisms in wine (Brettanomyces, Lactic Bacteria, refermentative yeasts, etc.), CHECK STAB iLife for tartaric stability, and CHECK STAB iProtein for protein stability.
Simple, accurate and increasingly effective instrumentation within reach of all wineries. We will delve into protocol management and the real benefits of proactively controlling potential microbiological instabilities and precipitation before affecting wine quality.
