Enoforum, both in terms of the number of speakers and participants, is the largest technical conference dedicated to the wine and viticulture sector. For its 23rd edition, the event returns to Feria de Zaragoza on May 20 and 21, 2026.

THE CONGRESS

At Enoforum, we firmly believe that innovation in our business comes from the convergence of:

  • Public research, which often gives birth to the ideas that lead to new technologies.
  • Supplier companies, whose R&D departments transform this knowledge into innovations that can be applied on a large scale.
  • Winemakers and oenologists, who as end users can provide practical experience, identify real needs, and develop new proposals.

During Enoforum, we encourage interaction between these three pillars of innovation, offering all participants the opportunity to participate positively in the progress and growth of the wine sector.

In fact, the event offers a series of activities that encourage the active involvement of all participants.

COMPANIES

Enoforum reserves a significant portion of the program for supplier companies to present their solutions and technological innovations.

RESEARCH WORK AND PROJECTS

All researchers from public centers can present the results of their research work and projects at Enoforum 2026 as a paper or poster.
Special conditions apply to work submitted through partner organizations (Gienol, SECH, PTV, and Innovi).

Program

The program is currently being defined. Simultaneous translation will be provided in Spanish and English in the auditorium.

The subjects to be covered in the auditorium will be:

  • Acidity and pH management in wine
  • Longevity and evolution of white wines
  • Development and preservation of aromatic complexity
  • Application of pulsed electric fields in oenology
  • Strategies for reducing undesirable compounds in wine
  • Oxygen management and control of redox potentials
  • Reducing the use of SO₂ in winemaking
  • Total and partial dealcoholization and its impact on the aromatic profile
  • Aging in wood and sensory evolution
  • Wine instabilities: the usual ones and new ones

At the same time, the conference room dedicated to viticulture will address some of the most significant agronomic challenges, including:

  • innovative solutions to soil degradation
  • nitrogen fertilization and its impact on must composition
  • advanced viticultural strategies to reduce sugar content while maintaining acidity
  • adapting vineyards to climate change: plant material, biotypes, clones, rootstocks, and soil pH
  • fungal diseases and vine defense mechanisms

Registration for each tasting can be done at the stands of the companies organizing them.
